AIP delicious tortillas!

Holy! My wife and I started this AIP diet (Auto Immune Protocol) and it is ever more limiting than being gluten free. I started with her because after being on the diet for a few weeks she said she was feeling fantastic. It’s not a lose weight, do this for a few months diet, but more of a find out what makes you feel good or bad and then eat that way forever diet. I already can’t eat gluten or soy and so I wasn’t really keen on cutting out more foods, but I do have a fair amount of inflammation in my knees and hips so I figured when not, if you feel so good maybe I will too. I lasted a few weeks but then thought I wasn’t really feeling that much better so I went off the diet. BOOM my knees and hips exploded with pain and inflammation after I ate chicken alfredo one night for dinner, and then butter chicken the next night. Could be the dairy in both, but man it was terrible! So I’m back on the diet and my knees and hips are feeling way better! It might just be the dairy that makes my joints inflamed, but the point of the AIP diet is to figure that out. So I’ll updated once we get to that stage. I need to eat AIP for 30 days and then I can start introducing foods back in to see if they cause problems.

But anyway the best thing to come from this diet so far is we discovered these great gluten free tortillas /wraps! I’ve been eating a ton of them, and Natalie was frustrated that I was eating her portion as well so I figured I better learn how to make them! Add they are super simple!

Ingredients:

  • 1.5 cups of cassava flour

  • 1.5 cups of tapioca flour / tapioca starch

  • 1 container of Thai Kitchen 2 Simple Ingredients Coconut Milk (other coconut milk usually has guar gum which is not AIP compliant but fine for GF)

  • Salt to taste

Directions:

  1. Preheat a cast iron skillet to medium heat. If the pan is hot enough and seasoned you won’t need to add any oil to cook these.

  2. Whisk all the ingredients together in a bowl until thoroughly combined

  3. Pour about a half cup of the batter into the center of the pan, and spread around into thinner circle with the back of a spoon.

  4. Let the tortilla cook until the batter looks dried all the way through, then flip it to cook the other side. If the tortilla is still sticking when you try flip it then it most likely needs to cook a bit longer. Once it is cooked through it should come up fairly easy.

  5. Cook the other side until done and then transfer to a plate while you cook the rest, or enjoy it hot of the skillet!
